Kale and Citrus Salad

Kale is a very versatile and nutritious green leafy vegetable. It is widely recognized as incredibly nutritious since ancient Greek and Roman times for its low fat, no cholesterol but health benefiting anti-oxidant properties. Kale is available at its best during winter months from November to March. In the store, buy fresh green leaves featuring crispy, crunchy, brilliant dark blue-green color.

Serves: 4

1 large bunch of kale, torn into bite size pieces
1 tbsp of olive oil
Kosher salt to taste
2 tbsp of lemon juice
2 of your favorite type of orange, peeled and cut into bite sized pieces
1/4 cup raw pumpkin seeds

Mix kale, salt and oil in a large bowl. Spend about 3 minutes massaging the oil and salt into the kale until it is completely coated and becomes a little tender. Pour the lemon juice over the kale mixture and add the chopped oranges and pumpkin seeds and mix.

Viola! You have made a yummy and nutritious salad! You can also substitute or add other salad greens along with the kale.
