1 large bunch of kale, torn into bite size pieces
1 tbsp of olive oil
Kosher salt to taste
2 tbsp of lemon juice
2 of your favorite type of orange, peeled and cut into bite sized pieces
1/4 cup raw pumpkin seeds
Mix kale, salt and oil in a large bowl. Spend about 3 minutes massaging the oil and salt into the kale until it is completely coated and becomes a little tender. Pour the lemon juice over the kale mixture and add the chopped oranges and pumpkin seeds and mix.
